Growing up I loved when my Daddy would make his famous Banana Pudding. It’s a recipe that he’s been making for decades. Now that I’m vegetarian I love to recreate the family recipes to keep them tasty but make them healthy. This is a vegan strawberry pudding that will give you the same feel as your banana pudding without all the guilt.


Strawberries (cleaned and sliced)

4 Tablespoons Corn Starch

1/4 cup sugar

2 1/2 cups Almond Milk or Coconut Milk

15-20 Vegan Nilla Wafers

2 Tablespoons Strawberry Extract

2 teaspoons Vanilla

Let’s Cook!

In a medium sized pot add almond milk and whisk in cornstarch and sugar. Bring the pot to medium heat and continue to stir until it thickens. Stir constantly to avoid clumps. Once it is thickened (approximately 15-20 minutes) turn the fire down to low and add vanilla and strawberry extract. Remove from heat and layer in a small pan. Layer in this order: half pudding, half strawberries, half wafers, and repeat. Take. Eat. Enjoy!
