I like food. I am often eating one meal, while I think about the next. I know it is sad, but at least I am honest. The best thing I like about food, besides eating it is the balance of most meals. I am a fan of both sweet and spicy food. It is something about this savory combination that makes my mouth water. So whether that is chicken and waffles, or peanut butter and jelly; delicious food has it own little unique taste bud in my book. With that, I have found this excellent recipe to balance both of your taste buds. Sweet and Spicy Chicken Tacos.

1 1/4 pounds boneless, skinless chicken breasts
1 Tbsp. olive oil
3 Tbsp. Zesty Rub (see recipe)
10 corn tortillas
Lime wedges
Cotija cheese

Zesty Rub Recipe

  • 1/4 cup brown sugar
  • 2 Tbsp. kosher salt
  • 2 Tbsp. ground coriander
  • 2 Tbsp. ground cumin
  • 2 Tbsp. garlic powder
  • 1 Tbsp. ground ginger
  • 1 Tbsp. smoked paprika
  • 1 Tbsp. ground black pepper
  • 1 tsp. cinnamon

Total time: 20 minutes

Toss chicken with olive oil and Zesty Rub. Grill on medium heat until fully cooked, 15 to 18 minutes. Thinly slice chicken and divide among warmed tortillas. Top with cilantro, sliced radishes, lime wedges, crumbled Cotija cheese, and salsa of your choice. This meal is served nicely with a Mango Margarita.
