You remember grandma’s stew right? Well I love stew in a crock pot and this slow cooked sweet potato stew will warm your belly and your heart.
1 lb Sweet Potato (peel and dice)
4 Large Carrots (diced) or One Bag of Baby Carrots
4 Celery Ribs (quartered)
1 Medium Yellow Onion
3 Garlic Cloves (minced)
3 Cups of Vegetable Broth
2 Cups of Dry Red Wine
1 tsp Smoked Paprika
1 tsp Dried Thyme
1 tsp of Pepper
1 tsp Seasoned Salt
This will be the easiest thing you’ve ever done. Dice your sweet potatoes, carrots, celery, onion, and garlic. Place your vegetables in the crock pot. Pour in vegetable broth and red wine. Mix in paprika, thyme, pepper, and salt. Turn the crock pot on low and let it cook for 7-8 hours. Or you can cook it on high for 4-5 hours. Once it is complete you can enjoy this delicious meal. It pairs well with white rice and my vegan cornbread. Enjoy!
