Ingredients

4 TBS Olive Oil

2 TBS Fresh Minced Garlic

3 Roma Tomatoes (chopped)

1/4 cup Black Pitted Olives

1/4 cup Green Olives

1/2 cup Vegan Cheese (optional)

2 TBS Capers

1 Pound Linguine

Salt and Pepper to Taste

Let’s Cook!

In a medium sized pot bring one pound of linguine to boiling. In a skillet over medium heat add olive oil, garlic, tomatoes and cook for 4-5 minutes until combined. Add black olives, green olives, and capers. Let it cook for 10 minutes on low. Once the pasta is done drain the water. Toss the pasta with your olive tomato sauce. Add vegan cheese and top with parsley or basil if you’d like.
