The Perfect Pear Crisp


Every year I have a habit of going crazy baking fruit crisp. I just can’t seem to get enough of them. Spring, winter, summer, or fall…I want it all the time. My all-time favorite is apple caramel, but after a taste of a new creation in the kitchen, the apple crisp has a strong contender this year. This particular time my taste buds have fallen in love with a sweet and tangy pear crisp.

There’s nothing like a delicious new twist on an old favorite. It’s easy, simple, and scrumptious.

The Perfect Pear Crisp

Crisp Topping

½ c All-purpose flour

½ c Brown sugar

½ c Sugar

¾ tsp Cinnamon

¼ tsp Salt

½ c Chopped pecans, walnuts, or hazelnuts

6T Butter, melted

Filling

4 Pears, diced

2/3 c Sugar

¼ tsp Salt

1-2 tsp Lemon juice

1 ½ T Flour or cornstarch

Preheat oven to 350°

For the crisp topping:

In a medium bowl add all ingredients except melted butter. Mix until incorporated well. Pour the melted butter over the dry ingredients. Mix well until it resembles coarse sand. Set aside.

For the pear filling:

In another medium mixing bowl add diced pears, sugar, salt and lemon juice. Mix well. Add the cornstarch or flour and toss to coat.

Pour mixture into an 8x8 baking dish. Add crumb topping evenly over the pear filling.

Bake for 30 mins. Move to the top rack and bake for an additional 5-8 mins or until the crumb topping is golden brown.

Tips & Tricks:

1. Be sure to use firm pears. Bosc are excellent for baking.

2. You can add extra fruit to spice it up a bit. Try apple & pear or pear & cranberry.

3. If you’re feeling fancy, drizzle caramel sauce on the filling before covering with the topping.

4. Eat with a few scoops of ice cream. Vanilla bean and butter pecan is a perfect match.
