Garlic Cauliflower Fritters


Recently I had a bunch of cauliflower in my refrigerator. I didn't want it to go bad so I decided to make it. What was I going to make? The idea came that I could whip up some fritters. Garlic Cauliflower Fritters

Ingredients

4 Cups of Cauliflower Florets

1/2 Cup Chopped Onion (yellow, red, or white)

2 Garlic Cloves (minced)

2 Eggs

4 tsp Baking Powder

1 small pack of Dry Italian Style Salad Dressing Mix .7 ounce

1/2 Cup Olive Oil for frying

Let's Cook!

1. Take your cauliflower florets, onion, and garlic and place it into a food processor. You want to make sure it gets minced. If you don't have one then just make sure you grab a knife and finely chop up all of your ingredients.

2. Once its chopped up add your cauliflower mix to a bowl with your eggs, baking powder, and italian dry mix.

3. Next pour your oil into a frying pan over medium heat.  

4. Drop big tablespoons of your cauliflower mix into the pan and let it fry on each side for 3-4 minutes or until golden brown

That's it! You're all done.

A few things you can have with it are dipping sauce and feta cheese crumbles.
