Organic Chocolate Chip Muffins
Here's a good switch for breakfast. You can bake the family some nice chocolate chip muffins and hot tea. It's a good refreshing change from the normal oatmeal or eggs. Check out the recipe.
1/2 cup butter
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla
2 large eggs
1/2 cup milk
2 cups 100% Organic White Flour OR Whole Wheat Flour
2 cups chocolate chips
confectioners sugar for topping
Preheat the oven to 350°F. Line a muffin or cupcake pan with liners.
Beat together: butter, sugar, baking powder, salt, vanilla, and flavor until fluffy. Beat in the eggs and milk. Mix in the flour and chocolate chips.
Spoon the batter into the muffin cups about half way. Do not overfill them because they will rise while baking. Bake the muffins for 20-30 minutes ovens vary so be sure to test them by sticking a toothpick in the center of one of the muffins. If the toothpick comes out clean, it is done. This means no cake batter on it. If it has a little chocolate on it, that's okay because the chocolate is warm from the oven. Pull them out, let them cool, then dust them with confectioners sugar.
